Sweet Potato & Black Bean Chilli

When the cold weather sets in, combining the warm, smoky flavors of cumin, chili powder and chipotle with sweet potatoes and black beans is not only a hearty combination but a super healthy one! Packed with fiber, flavour and antioxidants, this is a healthy meal that you can reheat and or freeze and enjoy anytime!
Nutritional Notes
- Sweet potatoes: packed with beta-carotene, which helps reduce oxidative stress (which damages your cells). Beta-carotene is also converted to vitamin A in the body, which is essential for immune health and good eyesight. Sweet potatoes contain fiber which is excellent for gut health and feeding your gut microbiome.
- Black beans: are legumes, a great source of plant-based protein as well as vitamins, minerals and antioxidants. Regularly including black beans in your diet may help reduce your risk of disease, including heart disease. Black beans help improve gut health and are also low glycemic so can help keep blood sugar stable.
- Onions: packed with antioxidants, as well as anti-inflammatory and antibacterial properties. They may help with blood pressure and can help lower blood sugar.
Ingredients
- 1 tablespoon + 2 teaspoons extra-virgin olive oil
- 1 mid-size sweet potato, peeled and diced
- 1 large onion, diced
- 4 cloves garlic, minced
- 2 tablespoons chili powder
- 4 teaspoons ground cumin
- ½ teaspoon ground chilli (chipotle preferred)
- ¼ teaspoon salt
- 2½ cups water
- 2 (15 ounce) cans black beans, rinsed
- 1 (14 ounce) can diced tomatoes
- 4 teaspoons lime juice
- ½ cup chopped fresh coriander
Instructions
- Heat 1 tablespoon plus 2 teaspoons oil in a Dutch oven over medium-high heat.
- Add 1 diced sweet potato and 1 diced onion and cook, stirring often, until the onion is beginning to soften, about 4 minutes.
- Add 4 minced garlic cloves, 2 tablespoons chili powder, 4 teaspoons cumin, 1/2 teaspoon chipotle and 1/4 teaspoon salt and cook, stirring constantly, for 30 seconds.
- Add 2 1/2 cups water and bring to a simmer.
- Cover, reduce heat to maintain a gentle simmer and cook until the sweet potato is tender (10 to 12 minutes
- Add 2 x cans of beans, 1 can tomatoes and 4 teaspoons lime juice; increase heat to high and return to a simmer, stirring often.
- Reduce heat and simmer until slightly reduced, about 5 minutes.
- Remove from heat and stir in 1/2 cup chopped coriander
