Prawn and Avocado Taco Salad
This recipe is designed as a single serve, but can be adapted to multiple serves just by increasing the quantities. Whether you’re single, married or a family, this recipe won’t disappoint!

Ingredients
– 200g uncooked prawns
– half a head of iceberg or cos lettuce
– 1 cup sliced capsicums, chopped
– 1 cup sliced tomatoes, chopped
– 1/2 avocado
– 1 tablespoon coriander
– 1/4 lime
– olive oil
– Old El Paso Taco Spice Mix
Method
1.) In a separate dinner bowl, chop the lettuce and avocado set aside.
2.) Mix the prawns in a skillet with olive oil, lime juice and the Taco Spice Mix until cooked. Set aside.
3.) In the same skillet, mix the capsicum, tomatoes and coriander until softened. Add more Taco Spice Mix if needed.
Mix all together and enjoy!
