Spiced Beef and Vegetable Bowl

Ingredients (serves 2–3)

  • 400g beef strips (or mince)
  • 1 tbsp olive oil
  • 1 small onion (sliced)
  • 2 cloves garlic (crushed)
  • 1 carrot (sliced)
  • 1 zucchini (sliced)
  • 1 cup pumpkin or sweet potato (cubed)

Spice Mix:

  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • ½ tsp cinnamon
  • ½ tsp turmeric
  • Pinch of chilli flakes (optional)
  • Sea salt + black pepper

Optional:

  • Fresh parsley or coriander
  • Squeeze of lemon

Method

  1. Heat oven to 200°C and roast pumpkin/sweet potato with olive oil, salt and pepper for 25–30 mins.
  2. Heat olive oil in a pan ? sauté onion and garlic until softened.
  3. Add beef ? cook until browned.
  4. Add spices ? stir well to coat.
  5. Add carrot and zucchini ? cook for 5–7 mins until just tender.
  6. Add roasted vegetables and mix through.
  7. Finish with fresh herbs and a squeeze of lemon.
    Alternative: add natural yogurt on top for a gut-friendly finish or serve over quinoa or brown rice for a more filling meal.
