Spiced Beef and Vegetable Bowl

Ingredients (serves 2–3)
- 400g beef strips (or mince)
- 1 tbsp olive oil
- 1 small onion (sliced)
- 2 cloves garlic (crushed)
- 1 carrot (sliced)
- 1 zucchini (sliced)
- 1 cup pumpkin or sweet potato (cubed)
Spice Mix:
- 1 tsp ground cumin
- 1 tsp smoked paprika
- ½ tsp cinnamon
- ½ tsp turmeric
- Pinch of chilli flakes (optional)
- Sea salt + black pepper
Optional:
- Fresh parsley or coriander
- Squeeze of lemon
Method
- Heat oven to 200°C and roast pumpkin/sweet potato with olive oil, salt and pepper for 25–30 mins.
- Heat olive oil in a pan ? sauté onion and garlic until softened.
- Add beef ? cook until browned.
- Add spices ? stir well to coat.
- Add carrot and zucchini ? cook for 5–7 mins until just tender.
- Add roasted vegetables and mix through.
- Finish with fresh herbs and a squeeze of lemon.
Alternative: add natural yogurt on top for a gut-friendly finish or serve over quinoa or brown rice for a more filling meal.
