Lentil & Vegetable Patties

Why it’s great:
High in plant-based protein and fibre — supports hormone health and detox pathways.
Ingredients:
- 1 cup cooked green lentils
- ½ grated carrot
- ½ grated zucchini
- 1 garlic clove, minced
- 1 tbsp flaxseed meal
- 2 tbsp oat flour or almond meal
- Herbs: parsley, cumin, salt, pepper
Method:
- Mash lentils and mix with other ingredients.
- Form patties and cook in olive oil for 3–4 minutes each side.
Serve with salad or wrapped in lettuce leaves with hummus.
