Lentil & Vegetable Patties

Why it’s great:
High in plant-based protein and fibre — supports hormone health and detox pathways.

Ingredients:

  • 1 cup cooked green lentils
  • ½ grated carrot
  • ½ grated zucchini
  • 1 garlic clove, minced
  • 1 tbsp flaxseed meal
  • 2 tbsp oat flour or almond meal
  • Herbs: parsley, cumin, salt, pepper

Method:

  1. Mash lentils and mix with other ingredients.
  2. Form patties and cook in olive oil for 3–4 minutes each side.

Serve with salad or wrapped in lettuce leaves with hummus.
